Ingredients

200 grams of Garfagnana spelt
300 grams of ricotta cheese
3 eggs
50 grams of grated parmesan cheese
One roll of puff pastry
Salt, pepper and nutmeg to taste.
Chopped fresh parsley to taste

Procedure

Bring a pot of salted water to a boil and cook the farro for about 30 minutes. Once cooked, drain well and let it cool. In a large bowl, combine the cooked farro with the ricotta, eggs, grated Parmesan, chopped parsley, salt, pepper and a grating of nutmeg. Mix everything together well until smooth.
Roll out a roll of puff pastry in a pie pan, making sure to cover the edges well as well. Pour the spelt mixture into the pan lined with puff pastry.

Baking: Preheat the oven to 180°C (350°F) and bake the pie for about 45 minutes, or until the surface is golden brown and crisp.

Once baked, let the spelt cake cool. It is delicious served warm or at room temperature, accompanied by cold meats and cheeses, all with a good glass of red wine.
